What Does Acidity in Olive Oil Mean?
A lab measure, not a flavor
Free acidity forms when the fat structure of the olive begins to break down — in bruised or damaged fruit, in olives that wait too long between picking and pressing, or under poor processing. You cannot taste it directly: a 0.3% and a 0.7% oil can only be told apart by laboratory analysis, not by sourness on the palate.
The classification thresholds
Under the International Olive Council trade standard and EU marketing rules, extra virgin olive oil must not exceed 0.8% free acidity, and virgin olive oil must stay at or below 2.0%. Oils above these limits cannot be sold as virgin classes and are directed to refining. The acidity ceiling is one of several criteria — sensory (taste) panels and other chemical parameters also apply.
Why low acidity signals quality
Reaching a very low acidity is not an accident: it requires healthy, undamaged fruit, short transport from grove to mill, and prompt cold extraction. That chain of care is exactly what early harvest production emphasizes. Bodrum Olive House’s early harvest extra virgin olive oil is produced to a maximum of 0.3% — comfortably inside the extra virgin class.
Acidity vs. taste: what you actually notice
The bitterness and the peppery catch in the throat that mark a fresh extra virgin oil come from polyphenols — natural antioxidants — and have nothing to do with free acidity. A very low-acidity oil can still taste bold and peppery; in fact the two often arrive together, because both reflect fresh fruit handled quickly.
- Acidity is the percentage of free oleic acid, measured in a laboratory.
- Extra virgin olive oil must be at or below 0.8% free acidity.
- Very low acidity reflects healthy fruit and fast, cold processing.
- Bitterness and pepper come from polyphenols — freshness, not acidity.

Frequently Asked Questions
Can you taste acidity in olive oil?
No. Free fatty acidity has no direct taste at these levels. The sharp or peppery notes people notice are polyphenols, which are a positive sign of freshness.
Is lower acidity always better?
Within the extra virgin class, lower acidity generally reflects better fruit condition and faster processing. It is one meaningful quality indicator among several — aroma, taste balance and freshness matter alongside it.
